Baked Cheese Grits

Ingredients:

  1. 4 cups - buttermilk
  2. 2 cups - water
  3. 1 1/2 cups - quick-cooking grits
  4. 10 tablespoons - unsalted butter
  5. 1 teaspoons - coarse kosher salt
  6. 1/2 teaspoons - cayenne pepper
  7. 1 cups - freshly grated cheddar cheese
  8. 3 - large eggs lightly beaten

Directions:

Preheat oven to 350 degrees F. Butter a 2-quart baking dish.

In a large heavy saucepan, bring the milk and water to a boil. Add grits and, stirring from time to time, simmer until the grits are done (2 to 5 minutes).

Remove the pan from heat and stir in the remaining ingredients. Pour into the buttered dish and bake for 30 to 40 minutes, until the top is lightly browned.

Serve hot.
