Baked Dijon Salmon

    A weightwatcher recipe. Although it costs more, be sure to use only wild Pacific salmon. Salmon farm raised in the Atlantic is wreaking havoc with the ocean and other species of fish. This recipe can easily be reduced/increased to fit the piece of salmon you are working with.

Ingredients:

  1. 1 1/2 pounds - Pacific salmon filet
  2. 3 tablespoons - dijon mustard
  3. 1 tablespoons - honey
  4. 2 tablespoons - corn flake crumbs
  5. 1 teaspoons - butter softened
  6. 1 tablespoons - fresh parsley chopped

Directions:

1. Preheat oven to 400 degrees. In a small bowl, stir together mustard and honey. Set aside. In another bowl, mix corn flake crumbs, butter and parsley.

2. Spread mustard mixture over salmon; top with crumb mixture. Bake 10-15 minutes, until fish is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the filet, so watch carefully. Season with salt and pepper as desired.
