Ingredients:

  1. 1 whole - Onion Chopped
  2. 3 whole - Carrots Peeled & Chopped
  3. 2 whole - Garlic Cloves Minced
  4. 1 whole - Medium Bitternut Squash Peeled, Seeded, Chopped
  5. 4 cups - Broth Vegetable or Chicken
  6. 2 whole - Apples Peeled, Chopped
  7. 1/2 teaspoons - Cinnamon
  8. 1/4 teaspoons - Ground Nutmeg
  9. 2 tablespoons - Maple Syrup

Directions:

1. Add everything to the slow cooker and cook on low for 6-8 hours until squash is completely tender.
2. Use an immersion blender to blend to a smooth consistency. You could also use a regular blender and blend in batches. Taste and season with salt and pepper.
