Ingredients:
- 3 cups - angel hair coleslaw
- 1/2 cups - thinly sliced red onion
- 4 - radishes thinly sliced
- 3 tablespoons - minced fresh cilantro
- 1 tablespoons - fresh lime juice
- 1 teaspoons - honey
- 1/4 teaspoons - salt
- - vegetable oil for frying
- 15 - frozen Cajun Breaded Catfish strips
- 6 - corn tortillas
- - sliced avocados, lime wedges optional for serving
Directions:
1. In a medium bowl, combine coleslaw, red onion, radishes, and cilantro.
2. In a small bowl, whisk together lime juice, honey, and salt. Add to coleslaw mixture, tossing gently to coat.
3. In a large Dutch oven, pour oil to a depth of 2 inches; heat to 360°. Fry catfish, in batches if necessary, for 2 to 3 minutes or until golden brown. Drain on paper towels.
4. Place 2-3 catfish strips in center of each tortilla. Top each evenly with coleslaw mixture. Serve with sliced avocado and lime wedges, if desired.
