Ingredients:
- 2 pounds - boneless, skinless chicken breasts or 3 pounds, as you prefer
- - water to cover
- 1 stalks - celery chopped
- 1 - large onion chopped
- 3 - carrots cleaned, chopped
- - chicken bouillon or chicken stock/broth
- 3 cups - uncooked brown rice or 4 cups, as needed
- 4 - boiled eggs chopped
- - salt and pepper to taste
Directions:
In a large stock pot, boil chicken in water; when done, remove from pot and chop chicken into bite-sized pieces.
Add more water (or stock/broth) to pot to fill it 3/4 way full. Add in chopped vegetables and bouillon.
Boil until veggies are tender. Depending on amount of water in the pot, add in 3-4 cups of uncooked brown rice; boil until rice is done.
Add in the chopped eggs; add salt and pepper to taste.
