Chicken Tortellini Soup

Ingredients:

  1. 4 - Carrots Cut into bite-size pieces
  2. 6 cups - Low-sodium chicken broth
  3. 8 ounces - Cheese tortellini
  4. 2 - Boneless, skinless chicken breasts
  5. 1 tablespoons - Pesto
  6. 2 tablespoons - Olive Oil
  7. 1/4 cups - Parmesan Cheese
  8. - Salt and pepper to taste

Directions:

1. Cut up chicken into bite-size pieces. Boil or sauté (with olive oil) until cooked through and no longer pink. Can stir in pesto at this point or add it at the end.
2. In a large saucepan, simmer the carrots in the broth until tender, 10-12 minutes.
3. Add the tortellini and simmer until tender, 2-4 minutes.
4. Add the chicken and cook, stirring occasionally, until heated through, 1-2 minutes more. Season with salt, pepper, and pesto (if haven’t added previously).
5. Sprinkle with parmesan cheese.
6. Serve warm.
