Chopped Vegetable Salad with Garlic Dressing

Ingredients:

  1. 2 cups - Cucumber Choppped
  2. 1 cups - Red bell pepper Chopped
  3. 1 cups - Yellow bell pepper Chopped
  4. 1 cups - Plum tomato Chopped
  5. 1/2 cups - Green onions Chopped
  6. 1 tablespoons - Fresh lemon juice
  7. 1 teaspoons - Olive oil
  8. 1/2 teaspoons - Salt
  9. 1/4 teaspoons - Dijon mustard
  10. 1/8 teaspoons - Freshly ground black pepper
  11. 2 cloves - Garlic Minced

Directions:

Combine first 5 ingredients in a large bowl. Combine lemon juice and next 5 ingredients in a small bowl; stir well with a whisk. Pour dressing over vegetables; toss gently to coat. Refrigerate until ready to serve.
