Crawfish Etoufee

Ingredients:

  1. 3/4 sticks - butter
  2. 2 - large onions chopped
  3. 2 stalks - celery chopped
  4. 1 - medium bell pepper chopped
  5. - garlic
  6. - salt and pepper
  7. - red pepper
  8. 1 1/2 pounds - crawfish tails 1-2 lbs, as desired
  9. 4 tablespoons - flour
  10. 2 cups - water
  11. 4 cubes - chicken bouillon
  12. - green onion tops
  13. - parsley
  14. - cooked rice for serving

Directions:

Melt butter in heavy pan. Sauté vegetables in butter for 10 minutes.

Add garlic, salt, red and black pepper. Add crawfish tails, and sauté for 1 minute.

Add flour; stir. Cook 3 minutes.

Add water, bouillon, green onion and parsley. Simmer 15 minutes.

Serve over rice.
