Curry Coconut Chickpeas

Ingredients:

  1. - Olive oil cooking spray
  2. 1 cups - Napa cabbage or bok choy Sliced
  3. 1/2 cups - Onion Diced
  4. 1/2 cups - Red bell pepper Diced
  5. 1/2 cups - Light coconut milk
  6. 1 teaspoons - Fresh garlic Minced
  7. 1 teaspoons - Fresh ginger Grated
  8. 1 teaspoons - Curry powder
  9. 1/4 cups - Chickpeas Cooked
  10. 1/4 teaspoons - Sea salt
  11. 1 pinchs - Fresh ground black pepper
  12. 1 teaspoons - Fresh basil Thinly sliced

Directions:

1. Preheat a nonstick frying pan, lightly coated with spray, over medium heat. Add Napa cabbage, sauté until cabbage shrinks down. Add onion and pepper, sauté for two to four minutes.
2. Add one tablespoon coconut milk along with garlic, ginger, and curry powder, sauté for two minutes. Add remaining coconut milk, chickpeas, salt and pepper; heat until warm. Add fresh basil and serve.
