Easy Kale-and-Cauliflower Soup

Ingredients:

  1. 1 tablespoons - olive oil
  2. 1 - onion diced
  3. 1 cloves - garlic minced
  4. 4 cups - low-sodium chicken broth
  5. 2 cups - cauliflower florets
  6. 2 cups - shredded kale
  7. - crushed red-pepper flakes

Directions:

Heat olive oil over medium-high heat.
Add 1 diced onion and cook about 5 minutes.
Add 1 clove minced garlic and cook 1 minute more.
Add chicken broth and cauliflower and cook until soft, about 10 minutes.
Add kale and cook until wilted, about 4 minutes.
Puree the mixture until smooth. Season with crushed red-pepper flakes
