French Onion Salisbury Steak

Ingredients:

  1. 1 1/4 pounds - ground chuck
  2. 1/4 cups - fresh minced parsley
  3. 2 tablespoons - scallion minced
  4. 1 teaspoons - kosher salt
  5. 1/2 teaspoons - black pepper
  6. 2 tablespoons - all-purpose flour
  7. 1 tablespoons - olive oil
  8. 2 cups - onions sliced
  9. 1 teaspoons - sugar
  10. 1 tablespoons - garlic minced
  11. 1 tablespoons - tomato paste
  12. 2 cups - beef broth
  13. 1/4 cups - dry red wine
  14. 3/4 teaspoons - kosher salt
  15. 1/2 teaspoons - dried thyme leaves
  16. - cheese toasts for serving with
  17. 4 teaspoons - minced fresh parsley
  18. 4 teaspoons - Parmesan cheese shredded
  19. 4 slices - French bread or baguette cut diagonally (1/2-inch thick)
  20. 2 tablespoons - unsalted butter softened
  21. 1/2 teaspoons - garlic minced
  22. - pinch of paprika
  23. 1/4 cups - Swiss cheese grated
  24. 1 tablespoons - Parmesan cheese grated

Directions:

FOR STEAKS:
1. Combine chuck, parsley, scallion, salt and pepper. Divide evenly into 4 portions and shape each into 3/4 to 1-inch thick oval patties. Place the flour in a shallow dish; dredge each patty in flour. Reserve 1 teaspoon flour.

2. Heat oil in a saute pan over medium-high heat. Add patties and saute 3 minutes on each side, or until browned. Remove from pan.

3. Add onions and sugar to pan; saute 5 minutes. Stir in garlic and tomato paste; saute 1 minute or until paste begins to brown. Sprinkle onions with reserved flour; cook 1 minute. Stir in broth and wine, then add the salt and thyme.

4. Return meat to pan and bring soup to a boil. Reduce heat to meduim-low, cover, and simmer 10 minutes.

5. Serve steaks on cheese toasts with onion soup ladled over. Garnish with parsley and Parmesan.

FOR CHEESE TOAST:
1. Preheat oven to 400 degrees F.

2. Place bread on a baking sheet.

3. Combine butter, garlic and paprika and spread on one side of each slice of bread. Combine cheeses and sprinkle evenly over butter. Bake until bread is crisp and cheese is bubbly, about 10-15 minutes.
