Fried Potato Cakes

Ingredients:

  1. 2 cups - to 3 cups mashed potatoes seasoned with salt, pepper, butter and milk, of course
  2. 1 - small onion chopped
  3. 1 - egg
  4. 1/4 cups - flour
  5. - salt and pepper to taste

Directions:

Mix the egg, onion and flour into the mashed potatoes. Season with salt and pepper as needed.

Form potato mix into patties. Coat potato patties in a little flour to help them get all golden and brown when they cook.

Pour some oil into your skillet. Fry patties until golden brown on both sides.
