Ingredients:
- 1 teaspoons - finely grated lemon zest
- - salt & coarsely ground pepper
- 1/4 cups - pitted Sicilian green or kalamata olives finely chopped
- 1 tablespoons - finely chopped chives
- 1 - baguette diagonally cut into 18 (1/2" thick) slices
- 3 tablespoons - olive oil
- 4 ounces - fresh soft goat cheese
- 2 ounces - cream cheese
- 1 teaspoons - finely chopped fresh flat-leaf parsley
- 1 teaspoons - finely chopped fresh thyme
Directions:
1. Preheat the oven to 375 degrees. Arrange the bread slices on 1 or 2 large heavy baking sheets. Brush the olive oil over the bread slices. Bake until the crostini are pale golden and crisp (about 10-15 mins).
2. Blend the goat cheese and cream cheese in a food processor until smooth and creamy. Add the parsley thyme, and lemon zest. Pulse just to blend. Season to taste with salt & pepper. Spread the cheese mixture over the crostini. Sprinkle with the olives, chives, and more pepper. Arrange the toast on a platter and serve.
