This is a lot of beef! If you don't have 4 pounds, this works just as well with as little as 2 pounds, just add more vegetables.

Ingredients:
- 4 pounds - beef chuck cut in 1 1/2 inch cubes
- 1/4 cups - all-purpose flour
- 12 ounces - tomato paste (2 6-oz cans)
- 2 1/2 pounds - small new potatoes scrubbed
- 1 pounds - baby carrots
- 2 - onions cut in 1-inch pieces
- 29 ounces - reduced sodium beef broth (2 14.5-oz cans)
- 1 cans - Irish stout beer (14.9 oz)
- 10 cloves - garlic sliced
- - salt and pepper
Directions:
Preheat oven to 350 degrees.
1. Heat olive oil in dutch over on med-high heat. Toss beef cubes with flour and brown in two batches. When second batch is done, return first batch to dutch oven.
2. Stir in tomato paste. Add potatoes, onions, broth, beer, garlic and 1/2 teaspoon each of salt and pepper. Cover and bring to a boil, stirring occasionally.
3. Cover pot and transfer to oven. Cook until fork-tender, checking for doneness at 2 hours and every 30 minutes after that. When done, add salt and pepper to taste.
