Macaroni & Broccoli

Ingredients:

  1. 1 pounds - chicken breast diced
  2. 1 - small onion diced
  3. 1 bags - macaroni
  4. 1 bags - broccoli rosettes
  5. 3 tablespoons - butter
  6. 3 tablespoons - flour
  7. 3 cups - milk
  8. 1 cups - chicken stock
  9. - salt and pepper
  10. 2 pinchs - cayenne
  11. 1 teaspoons - paprika
  12. 1 teaspoons - Dijon
  13. 10 - cheese
  14. - EVOO

Directions:

Start skillet to warm with EVOO in bottom for chicken.

Start water to boil in large pan for macaroni.

Put bite-sized chicken in oil w/diced onion. When you turn the chicken, add salt and pepper.

Start sauce: melt butter then whisk in flour. Add milk and chicken stock. After about 2 minutes, add cayenne & paprika. Whisk and set on a low flame.

When chicken is brown, lower heat to keep warm.

Put macaroni in water - add salt. Just short of done, add broccoli. Do not over cook broccoli. Drain.

Add cheese to salt mixture to melt. Add 1 teaspoon of Dijon and mix.

Add chicken to pasta. When sauce is ready, mix all together.
