Ingredients:
- 2 - eggs well beaten
- 1 cups - buttermilk
- 1/2 teaspoons - salt
- 3/4 teaspoons - baking soda
- 1 - onion chopped
- 2 - jalapeno peppers chopped
- 1/2 cups - drippings (bacon or grease drippings or cooking oil)
- 1 cups - cornmeal
- 1/2 cups - grated cheese or more, to taste
Directions:
Mix all ingredients together until combined well.
Pour half of the mixture into a well-greased pan or skillet sprinkled with a little corn meal. Sprinkle the grated cheese over the mixture. Then pour in the remaining half of the batter.
Bake for about 30 minutes at 400 degrees F or until done (test for doneness and remove from oven when finished baking).
