Parmesan Crusted Tilapia

Ingredients:

  1. 3/4 cups - freshly grated parmesan cheese
  2. 2 teaspoons - paprika
  3. 1 tablespoons - chopped flat-leaf parsley
  4. 4 - tilapia fillets (about 1 lb total)
  5. 1 - lemon, cut into wedges

Directions:

1. Preheat oven to 400 degrees.

2. In a shallow dish, combine cheese and paprika and parsley - season with salt and pepper.

3. Drizzle the fish with olive oil and dredge in the cheese mixture.

4. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10-12 minutes.

5. Serve with lemon wedges.
