Ingredients:
- 5 cups - Freshly peeled and sliced peaches
- 3 cups - Fresh blackberries
- 1 1/2 cups - Sugar Divided use
- 1/4 cups - Instant tapioca
- - Juice of 1/2 lime
- 1/2 teaspoons - Plus a pinch of salt Divided use
- 1 cups - Flour
- 1 cups - Sweetened, shredded coconut
- 1/2 cups - Pecans Toasted & coarsely chopped
- 1/2 teaspoons - Baking powder
- 1/2 cups - Cold butter Cubed
- 1 - Large egg
- - Ice cream For serving
Directions:
1. Heat oven to 375.
2. Toss peaches and blackberries w/ 3/4 C. sugar, tapioca, lime juice and a pinch of salt. Spoon into 2-3 qt. baking dish, about 2 inches high.
3. In a mixing bowl, combine flour, remaining 3/4 C. sugar, coconut, pecans, baking powder and remaining 1/2 tsp. salt. Using your fingers, rub the butter cubes into the mixture and combine until it looks like coarse sand.
4. Blend in egg. With your hands, gather the dough into clumps and form into large cookies. Arrange the cookies over the fruit, covering it completely.
5. Place baking pan in the oven and bake 45-55 minutes or until topping is golden and the fruit mixture is bubbling. Place on a rack and cook for at least 1 hour before serving.
6. Serve with a scoop of vanilla ice cream.
