Goes well with mashed potatoes. Make the meatballs on the small side. They hold together better when they are smaller for some reason.

Ingredients:
- 1 pounds - ground beef
- 1/3 cups - onion minced
- 3 - garlic cloves minced
- 1 - Beef flavored Rice-a-Roni 6.8 ounce box
- 1 - egg
- 1 1/2 teaspoons - dried parsley
- - salt and pepper to taste
- 2 cups - water warm
- - corn starch (for slurry)
- - water cold (for slurry)
Directions:
Preheat oven to 350 degrees. Combine meat, onion, garlic, the rice from the box (save the seasoning packet for later), egg, parsley, and salt and pepper. Shape into 10-12 meatballs. (Smaller is better) Brown over medium/high heat. Transfer to a glass baking dish. Mix seasoning packet with warm water and pour over the meatballs. Cover with foil tightly and bake for 45 minutes. Pour juice into a small saucepan and thicken with a cornstarch/cold water slurry. Serve over meatballs.
