There is always extra sauce so I use it on top of burgers or as a dip.

Ingredients:
- 3 cans - Cream of chicken soup
- 3 cups - Sour cream
- 1 cups - Hatch green chilies Diced
- 2 bunches - Green onion Diced
- 2 cups - Mexican cheese
- 1 - Rotisserie chicken Chopped up
- 2 cans - Tomatoes and green chilies
- - Corn tortillas
- - Mexican cheese
Directions:
Sauce:
Combine soup, sour cream, chilies, and green onions. Bring slowly to just soft boil. Turn down heat and add cheese. Simmer for at least 30 minutes. Use a shield to stop splatter.
Filling:
Combine chicken and tomatoes in a pot til warm.
Warm tortillas in oven in foil or fry. (Your preference)
Assemble:
Place tortillas in a casserole dish. Just enough to cover bottom. Put a small amount of sauce on tortillas. Add half of chicken mixture. Top with sauce and cheese (no need to use a lot). Add another layer of tortillas, chicken, sauce, and cheese.
Cook:
Heat oven to 350. Cook enchiladas 30 minutes or until cheese is completely melted.
Let sit for 10 minutes then enjoy.
