Ingredients:
- 1 pounds - Tender beef
- 12 ounces - Chow mein noodles 1 package
- - Oil for frying
- 1/8 teaspoons - Salt
- 2 slices - Ginger slivered
- 2 cups - Bean sprouts
- - Mushrooms any kind, sliced
- 2 - Scallions cut in 2
- 2 1/2 tablespoons - Sherry
- 1 cups - Snow peas
- 1 cloves - Garlic minced
- 1 tablespoons - Soy sauce
- 1 tablespoons - Oil
- 1/2 teaspoons - Tabasco sauce
- 1 teaspoons - Sugar
- 1 tablespoons - Cornstarch
- 3 tablespoons - Oyster sauce or 2 T. soy sauce
- 2 cups - Soup stock
Directions:
Marinate the meat for 1 hour in the sauces listed.
1. Heat oil in wok to medium and fry noodles in small batches until golden brown on both sides. Remove from wok and drain on paper towels.
2. Heat wok with 2 T. oil. Add salt, ginger, garlic and marinated beef and stir-fry rapidly until lightly browned. Remove from wok.
3. Add bean sprout, mushrooms and scallions to wok and stir-fry until crisp-tender, about 2 minutes.
4. Add sherry and quickly cover pan, cooking 1 minute more.
5. Stir in sauce ingredients and heat until thickened.
6. Return beef to wok, add snow peas, mixing well. Serve over heated noodles placed on a serving platter.
