Ingredients:
- 1 bags - 10 oz. fresh spinach
- 1/2 cups - blueberries
- 1/2 cups - sliced strawberries
- 1 teaspoons - Dijon mustard
- 2 teaspoons - maple syrup
- 2 teaspoons - balsamic vinegar
- 1/4 cups - olive oil
- 1 - green onion, white only finely sliced
Directions:
For Salad:
Wash spinach and dry. Tear large leaves into bite-size pieces. Divide among 4 salad plates and drizzle with Maple Balsamic Dressing. Toss to coat. Sprinkle fresh blueberries and sliced strawberries over all.
For Dressing:
Whisk together mustard, syrup, balsamic vinegar, olive oil and sliced onion. Taste for acidity and add a few more drops of maple syrup if needed.
