Ingredients:

  1. 1 tablespoons - olive oil
  2. 2 tablespoons - freshly grated lemon zest
  3. 1 tablespoons - chopped fresh oregano
  4. 1/2 teaspoons - kosher salt
  5. 1/2 teaspoons - black pepper
  6. 1 pounds - skirt steak cut into 4 pieces
  7. 5 ounces - frozen brown rice or ready rice prepared according to package directions
  8. 4 ounces - cherry tomatoes halved
  9. 1/4 cups - pitted olives
  10. 1/2 - small diced shallot (about 3 Tbsp)
  11. 2 tablespoons - fresh lemon juice
  12. 2 tablespoons - extra virgin olive oil
  13. 2 tablespoons - chopped fresh oregano
  14. 1 cloves - garlic minced
  15. 1/2 teaspoons - kosher salt
  16. 1/2 teaspoons - black pepper

Directions:

Make steak: Heat olive oil in cast iron skillet over medium-high heat. Cmbine lemon zest, oregano, salt, & black pepper in small bowl. Rub over steak to coat. Add to hot skillet and cook to medium-rare, 4-8 minutes.

Make salad: Prepare rice according to package directions. Combine with remaining ingredients. Slice steak and serve with salad.
