Brief Description
From an old Jake's restaurant cookbook. This is our traditional meal for special occasions, just add a salad and a loaf of good bread. To serve more than two people, use one pound of clams per person, and increase the ingredients accordingly.

Ingredients:
- 2 pounds - manila clams Make sure the clams are fresh, they should be tightly closed.
- 4 tablespoons - sherry
- 4 tablespoons - dry white wine
- 1/2 teaspoons - minced shallots
- 1/2 teaspoons - minced garlic
- 1/2 teaspoons - lemon juice
- 6 tablespoons - butter melted
Directions:
Choose the right size pan, about 1 quart capacity for each pound of clams.
combine all ingredients in the pot over high heat. Cover and allow the clams to steam until they open. Depending on the type, size and age of the clams, this will take 3-8 minutes. Remove the clams to serving bowls and return the broth to the pot. Simmer to reduce for 1-2 minutes, then pour broth over clams.
Serve the butter in a separate bowl and pass the bread!
