In a pinch, you can substitute dried herbs for one of the ingredients, but the fresh herbs really make this. It's worth buying the herbs or growing your own for this dish. Once, I forgot to allow time to marinate, so I put the mixture under the skin and cooked it immediately; this works pretty well to get the flavor into the meat. Serve with smashed potatoes and a green vegetable, this is good enough for guests.

Ingredients:
- 1 tablespoons - olive oil
- 1 tablespoons - dijon mustard
- 4 pieces - chicken thigh with bone and skin
- 1 tablespoons - fresh parsley finely chopped
- 1 tablespoons - fresh rosemary finely chopped
- 1 tablespoons - fresh thyme finely chopped
Directions:
Mix herbs (any assortment of fresh is ok), mustard and oil in non-reactive bowl. Season chicken with salt and pepper and toss in marinade to coat. Cover and marinate at least one hour or overnight. Preheat oven to 450 degrees. Place chicken on foil-lined pan, roast till cooked through, about 40 minutes.
