To cook wild rice, soak 1 cup uncooked wild rice overnight in cold water; then drain. In saucepan, bring to a boil 2 cups water with 2 tablespoons butter and 1 teaspoon salt; add rice and cook, covered, for 25-30 minutes. OR follow directions on package.

Ingredients:
- 1 - large onion chopped
- 2 ribs - celery diced
- 8 ounces - fresh mushrooms sliced
- 1/2 cups - butter
- 1 cups - flour
- 8 cups - chicken or turkey broth
- - parsley flakes
- 2 cups - cooked wild rice
- 1 cups - half and half
- - salt and pepper to taste
- 1 tablespoons - cooking sherry optional
Directions:
Saute onion, celery, and mushrooms in butter for 3 minutes.
Sprinkle with flour and stir well; add broth and some parsley flakes. Cook until consistency is like thin gravy.
Add cooked rice, half and half, salt and pepper, and sherry. Heat through and then serve.
