August, 2014 I have a convection oven. bake 325 degrees for 55 minutes. Were perfect.

Ingredients:
- 3 cups - Flour
- 1 1/2 cups - Sugar
- 1 teaspoons - Salt
- 2 teaspoons - Cinnamon
- 1 teaspoons - Baking Powder
- 3/4 teaspoons - Baking Soda
- 1 teaspoons - Nutmeg
- 3 - Eggs
- 1 cups - Oil
- 1 teaspoons - V anilla
- 2 cups - Zucchini shredded
- 1 cups - nuts (optional) chopped
Directions:
Beat together eggs & oil. Set aside.
Mix remaining ingredients in large bowl. Pour egg mixture over & stir until moist.
Turn into two greased 9" x 5" x3" loaf pans.
Bake 325- 350 degrees for 1 hour to 1 hour 30 minutes. (Time will depend on your oven.)
Cool in pan for 10 minutes. Invert pans on wire rack, turn top side up & cool.
